OK I just tried making the balls in my new NutriBullet. Worked great. Put the garlic, 2 cloves 5555 and ground pepper in it. Ran it for a bit, added the liquid and sugar, bended it. Dropped in the ground pork and blended it three of times, mixing it a little between blendings. It emulsified amazingly. I've made sausage for 30 years, I know. I used a small vessel to blend it in, not sure how much of a difference it makes but it worked great. Oh yeah I didn't add an ice cube.

It's for tomorrow night in a soup but I'm sure they will turn out great.

The meatballs are absolutely phenomenal! The recipe is super easy to make, the only thing I had to buy extra was the fish sauce. The umami flavor is really enhanced in the meat, and they are super smooth in texture. I added extra pork fat since my meat only had 15%.
I added the balls into the Thai Noodle Soup as you recommended, but honestly, I could just eat the whole bowl as they are, with some green onions and a bit of broth.
Thanks for the recipe, I will definitely make it again.
