Hearty & soothing. I’ve been cooking Thai food for years (following you for about 8) although never really delved into cooking dishes outside curries & stir fries. Cooked this last night & was very tasty, I subbed your Thai-style chicken stock and chicken thighs for simplicity. My family aren’t big soup people and they were raving about the flavours! I also served it with your laab bites which were devine with fresh mint from the garden (guess who received their book yesterday). It’s starting to cool down in Australia coming into winter, and this is just perfect for this weather.

Absolutely, but you'd have to increase the cooking time to ensure the drums are tender, 35-40 mins.

Yes and no, tamarind is not a necessary part of tom yum chicken, some people add it some don't depending on their preference. So in the spirit of simplification, I chose not to add it.
