I have made this twice already in the last two months. The first time I made it, I used pork ribs and water as the base. The second time I made it, it was last week with some homemade Chinese-style chicken stock that was full of collagen. BOTH TIMES WERE INCREDIBLE! I really love this soup with the Napa cabbage and egg tofu; the rustic style pork meatballs are a must. The first time I made it, I also threw in enoki mushrooms. The second time, I added carrots. I also made the garlic chips and topped with garlic oil both times - this step ABSOLUTELY should not be missed, as they truly make the soup sing. The glass noodles really do stay solid in the soup for days, which is so helpful for delicious leftovers. This soup will easily be on repeat in my house from now on. Made it exactly as you did in the video, and added enoki mushrooms with the noodles. The white pepper added a great bite to the pork meatballs, and the combo of the ribs and meatballs was great. The fried garlic & oil was totally worth the extra step. Thanks for the fantastic recipes online and in both books -- and in particular your super-helpful videos.

Thanks for bringing back this memory from my childhood. I grew up in a Thai-Chinese family in the US and my mom would make this soup with bean thread noodles, meatballs, and pickled cabbage. And of course plenty of fried garlic!

I am trying to figure out the name of another dish I ate as a kid in Thailand. It is probably a Thai Chinese dish. It was egg noodles very heavily flavored with see ew sauce and probably black vinegar, with mushrooms, and slivers of pork or chicken. The noodles were fried and the flavor profile was actually not too different from yakisoba. We would eat it in Thai Chinese restaurants in Bangkok. Do you know it?

Hi - this was a recommended video for me on YouTube and I just happened to have some pork stock in the fridge along with pork mince - made this with pork meatballs plus a few wontons, added a little bit of ginger as well just because it was there. The soup is incredible! Thank you for a recipe that I otherwise would have gone my whole life without knowing! Delicious!
