I use the air fryer for this all the time. I prefer it actually because the chicken doesn’t stick and fall apart on a grill.

Freezing is probably ok. I would make sure it's in an airtight zip bag with all the air removed.

Yes the chicken can definitely be frozen with the marinade. But the easier thing to do is cook everything off, then freeze the extra cooked chicken. It just makes it easier to reheat as you can just thaw and microwave the cooked chicken, so you don't have to setup the grill and everything again.

Question: I marinate the chicken this AM and found out 1/2 my family will not be home for dinner, can I freeze the raw chicken with the marinate on it? I know it will be great leftovers but I doubled it.

I have always assumed that making sauce in a mortar was better but not better enough to not use the processor. So, today I did both to test that idea. Sadly, the processor’s work load just decreased. The mortar version was way better. Thanks for the really great recipe and for inspiring me to bust my long held assumption!

This is a fantastic recipe and I used it with pork, where I left it for 24 hours. Can I use this to freeze the pork/chicken in the sauce, to defrost and cook at a later date? Does the sauce freeze well on its own? I am just thinking on how to speed up making a weekday supper. Any ideas? Asian cooking newbie:)

No, the ingredients associated with that step are listed alongside instructions so you don't have to refer back to the ingredient list for amounts while you're cooking. I'd use about ¼ cup of chopped lemongrass.

After the marinade is poured over the chicken, you have "2 Tbsp neutral oil, 1 Tbsp fish sauce, 1 Tbsp soy sauce, 1 Tbsp sugar, 2 Tbsp water, 1 lb chicken thighs" listed - with no follow up instructions. Was it a mistake to list them again?

Also, what is the measurement of the finely chopped lemongrass in tablespoons? Asking because I can buy finely chopped lemongrass in the frozen section of a local Asian market.
