I tried the Prik Nam Pla with the Thai Omelette and it was bomb!
I've made prik nam pla several different ways over the years (for such a basic condiment it has a lot of nuances) and yours has just the right balance. It will be my go-to from now on. Next time I'll try it with the marbled eggs.

thank you. There is a huge Vietnamese market in Cherry Hill, NJ (little over an hour from where I live) and they have a good selection of Vegan nam pla. I bought every variety (about 4) and I prefer using Golden Mountain Sauce instead. Always fun to try new things though šŸ™‚

Try sourcing vegan prik nam pla, same umami flavour. I actually prefer it although not vegan myself.

I've fallen head to toe with this recipe. Ever since I found this recipe, this has been my comfort food when the day is rainy and I want something quick but superbly delicious! But as it turns out, it's not something you can just share with just anyone. Some people just don't like the taste of the fish sauce. All in all, thank you for sharing this recipe!

Your Prik Nam Pla recipe is the BEST. I am so happy I found your youtube channel and website (from the NY Times article last week). Been making Thai food for over 35 years and learn new things all the time. I substituted Thai soy sauce for the Nam Pla because we are vegans. You have a new fan/follower.

I loved all these egg dishes in Thailand.
Note that eggs in the US from CAFO facilities are full of antibiotic-resistant pathogens so they should not be used like this. Actually, they shouldn't be eaten at all.

Thank you! I made this with vegetarian fish sauce and didn't have fresh chilies so I ended up using Vietnamese garlic chili sauce (tuong ot toi). It was good and homey, reminded me of Thailand. Next time I will try it with proper chilies šŸ™‚

Nice condiment & dish. Used jalapeƱos because that's what I had. Since jalapeƱos are much larger than Thai chiles, I used one and still had to double the amount of fish sauce and lime juice to have enough liquid to cover the chiles, shallot, and garlic. Otherwise, followed the recipe. Easy to do - I'll make this again.
