This recipe was perfect! I didn’t have shrimp paste & but followed it exactly, other than adding a little extra curry powder. This is the second recipe I’ve followed from you & they never disappoint. I now look for your recipes when making Thai food. My boyfriend even thinks it’s better than going to the restaurant. Thank you!!

I made this without any of the optional ingredients except the coconut rice. The flavor was delicious!! One mistake I made, though, was quadrupling the recipe. I ended up with too much food for it to properly brown. Next time I'll try a smaller batch, and maybe add some peas & carrots!

This is probably the most authentic pineapple rice recipe I've come across online. I prefer to cook it with next-day plain jasmine rice, just because I prefer the texture, and I also like to add a bit of chilli with the rice and onion.

Kailin is totally right, of course, about it having a different flavour profile and texture, but it will also make for a lighter dish with more separate rice grains (unless you make it into coconut rice). I often use basmati for nasi goreng for exactly this reason.

I made this for dinner the other night. Followed this recipe to and made the pineapple bowl. The only changed I made was to add a sprinkle of salt and paprika when frying the shrimp. This was absolutely delicious and my husband loved it. He’s already requested to make it again! I was worried the pineapple wasn’t ripe yet, still green on the outside and found the grid cutting a little difficult but the pineapple still tasted good and was well worth the effort. Thank you for sharing and will definitely make again!

Hi Katie, All instances of cups in my recipes are referring to standard measuring cups. Since rice cups are not a standardized measuring tool and it is not available to those who don't have a rice cooker, I do not use it in recipes 🙂

It would have a very different texture and the dish wouldn't taste the way it's supposed to, so I wouldn't do it. But it wouldn't be the end of the world, just make sure you use the appropriate amount of water.

Hi! Thai curry pastes have a very different flavour from curry powder, so...yes you CAN, but you'll be introducing different flavours entirely, but it might be good 🙂 I'd use yellow curry paste if you do.
