Hi, recipe looks amazing! The only Chinese sausage i could find here in the UK is Wing Wing brand. They are thin and quite expensive, but i wonder if you are familiar with this brand and if they are too salty. I wanted to ask before cooking as i don't want to waste them.

Also threw in a teaspoon of dark soy, because, well, I like the color. And since I’d gone that far, no one would be surprised to see me add a little pineapple? It was great! Ultimately, I think I had seen a lot of things I liked from a number of your recipes and decided to combine them. Now it’s time to find a use for the leftover Chinese Sausage!

I just watched you make Pad See Ew and thought yep, that's for dinner tomorrow but what am I going to do with these Chinese Lap Cheong in the fridge... google that and bam, this website came up. Didn't even know it was you until I'd sat down again with the fried rice to go back through why it came out so amazing. Easy as. Lime as a spritz was a good touch.

Believe it or not, this dish is not as popular as you may think in Hongkong, even Chinese sausage is something we grew up with. The more commonly found version is in fact fried sticky rice, which I will be looking forward to Pai’s version too.
