Cary, I was referring to the spice mix from Penzeys that I used, which contains onion, shallot, green peppercorn, garlic, and green onion but does not have any salt.

We scaled up so the 80 g tomato per egg was very helpful. Regular tomatoes left the finished dish much more juicy and the scrambled eggs very very soft, so I might suggest draining (and saving to re-add later) the tomatoes to some degree before adding the tomatoes to the scrambled egg. The kids did not like the smell of the fish sauce but we all know the flavor is usually not fishy at all. We unauthentically added a saltless onion, shallot, green peppercorn, garlic, and green onion spice mix (Justice seasoning from Penzeys). We will make this dish again as we always are looking for an easy egg dish to use up the eggs from our chickens. It would also make an excellent breakfast burrito, to mix cuisines. Thank you! Coming from a traditional Italian-American cooking background, I really liked the flavoring of this. My own vine-ripened roma's surely helped, but they turned out tasting very different that my usual onion-pepper-parm seasoning.
