In reply to Chris. Hi! Sorry this took a while. So, assuming you did use the right starch, the only explanation for "too soft" is that there was too much water or too little starch. Perhaps a mis-measurement for the starch?

I'm going to eat this tonight! I cooked my mung bean starch last night and popped the block in the fridge over night. I'm a little concerned that they have come out too soft; I ran a test and blanched just a small portion, and they did come out very soft. So I have bagged the rest and put them in the fridge until dinnertime.
Any ideas as to why mine may have turned out softer? And any tips on how to make them as springy as yours appear?

The recipes are interesting but is uncomfortable to navigate the blog. Preferred the older version where you could look up for oldest recipes or newest recipes with pages options. Would have been better if you had the archive folders sorted according to dates or years. Or the all recipes options can be displayed in list display basis instead on category basis . Or the latest recipes having additional tabs for more latest recipes. This way we can scroll between the old and new recipes.
