Followed the recipe exactly and everything came out beautifully. My grandson’s kindergarten class is studying Thailand and he wanted to bring an example of Thai food. We had a great time making it. Made the recipe twice, then portioned out 30 samples to take to school. Yummy!

Hi! I am definitely going to try this recipe! Thai sticky rice is a favorite of ours when we eat out. The Thai restaurant we go to serves it with a garnish of black sesame, instead of mung beans, which really makes it look pretty, but doesn't add a crunch. Im of Indian origin, so mung beans are a familiar staple. I'd like to suggest Indian or Pakistani mangoes to anyone living in the US and Canada. There's sp many varieties that I can't mention them all,( Alphonso, Sindhri, Chausa-so sweet, it actually puts me off) and many more, so delicious that it's worth the price. I think they would also be available in the UK, wherever there is a sizeable Southeast Asian community.

You can scale everything up proportionally, steaming time for the rice might increase slightly but not much. Just taste it to check doneness. For 60 sample size portions you probably only need to 4x the recipe (but depends how big your "samples" are)

Awesome recipe! I am wanting to make in bulk to serve sample sized portions for my daughter’s cultural project, how do you suggest making in bulk?? Do I just multiply recipe and increase steaming time? I need to have about 60 portions.

Keep it well wrapped and it'll be fine for the dinner party (I assume you're talking about the rice). Keep the salted coconut sauce in the fridge. Don't peel the mangoes until serving.

Did you rinse the rice at least 4-5 times ?
If not then make sure you do this. The water should be clear.
And what also helps is to adjust the steaming time.
What i have learned inThailand is that if the rice has soaked overnight, s steaming time of 20-23 minutes is enough.
So : Was 4-5 times / Soak overnight en steam 20-23 minutes and you will be fine
