Did these tonight, flavour explosion. I also did a non chilli flake version and a heavy lime version of the Nam Jim Jaew. Totally recommended. I was surprised how tasty the beef was (marinade overnight).

The result is e very fine paste making a nice silky curry. The water content in the soaked chillies is enough for the Nutribullet to work flawless. Though you have to shake it several times during the process and also allow some pauses to avoid heating up the paste.

This is insanely good! Aside from Pad Thai, I’ve never ventured into Thai food until I had Tom Kha Gai at a restaurant the other day. I used normal lime zest, galangal paste and coriander stems instead. I have to say the result was still fantastic.

I have since made a bulk order of the things I didn't have and was wondering if it is better to make a large batch of paste by multiplying the recipe and freeze the paste or to freeze the individual ingredients (coriander roots, limes, galangal, chillies, etc.) and use them to make one serving of paste each time? Which freezes better?

I made this recipe vegetarian and it was wonderful. Tofu instead of meat and vegetable stock instead of pork stock. Oyster sauce can easily be replaced with mushroom sauce. Very delicious!! *-*

Your recipe has changed all that. The marinade is so much better than any we've come across in any other recipe and I've never made a peanut sauce so good (previous experiences were all with peanut butter).
