It takes at least a few weeks for it to go bad in the fridge, BUT this does depend on the brand and how much salt they add. The more salt, the longer it lasts. However, for best flavour I always freeze it because even though the paste hasn't spoiled, the flavour will likely not be fresh if stored in the fridge for a long time.

How long does unused curry paste last in the refrigerator?

1 teaspoon for a 4-serving curry should do it 🙂

I’d like to do that (for the extra umami flavour dimension), but can you tell me how much to add to a standard curry recipe? It’s potent, so I don’t want to add too much and overpower it with shrimp paste!

Sadly there isn't any powdered version that I know of. Sorry!

Can you recommend any powdered Thai curries available that can be reconstituted into paste?

Haven't used it for over a decade but from what I remember it was pretty good.

One thing though. Panang curry is a go to for me as I love the spice and the added flavour of peanuts but Mar ploy panang paste does not show peanuts in its ingredients which I find strange but also my wife and kids won't like the spice as much as me so first off why no peanuts in the paste and second would adding peanuts to red curry paste that has a bit less heat give a simular flavour.
Thank you

It covers most of my experience as well. My personal ranking by type and trademark: RED: Mae ploy - GREEN: Aroy - Yellow: Mae Ploy, Massaman: Mae Ploy and for Phanaeng: Maesri

I feel like Aroy D has different formulas, the ones in Canada does not have any animal products. Or this is an old formula but the image is still being used. I guess your other option is Maesri.

Hi Marc, thanks for letting me know. I find that rather strange because the one I buy, and in other pictures online, shrimp powder is not listed. It's possible the shrimp version is an old formula or there are a few formulas in circulation. In any case, I will note it as an asterisk in the post. Thanks again!
