In reply to Michael. I would just use a LOT of it. Like at least the whole jar for a 4-serving curry. If you like spicy, pound in some extra green chilies like jalapeno or serranos.

If Thai Kitchen is the only brand I have within my reach what are your recommendations to bring up the flavor? For example what ingredients to add, etc.

I'm so glad I found your website, especially this Green Curry paste taste test. I actually have some Aroy-D green curry paste in the fridge! I love green curry, but have been wondering how I can make it less spicy but still with lots of flavor. Would it help to add milder peppers, like poblanos, and more Thai basil & lime to the curry paste when sauteeing in oil? Thanks in advance!

In reply to Mark. Yes - here too. I lived in Vietnam for a decade. Love Asian cooking. Generally prefer things to be salty but the Mae Ploy I find in Britain is just so salty as to be inedible. I often find that the recipes that suggest using paste just aren't in line with whatever they put in the western version of Mae Ploy. Something is different.

Hi Pailin, I'm a big fan of your cooking show and love Thai food. My favorites are Thai fried rice and Red curry.
I agree with your analysis and I too use Mae Ploy or Aroy-D pastes.

I've figured out all ingredients for both these recipes except Prik bon (Thai chili flakes).

Appreciate if you could share some brands that provide authentic Hot Thai chili flakes.

My 84 year old mother with dementia is living with me and she won't eat anything she thinks has "too much spice" in it, so I was in search of the blandest green curry on the market. So, oddly enough, I'm glad to see that the brand I dislike the most (Thai Kitchen), yet is the most readily available, is the one I should get while I'm feeding my mother. Oh, the joys of dementia! I cannot believe how much I've had to simplify my cooking.

Where I live it seems that Cock Brand is very popular. I have used it, but I too prefer Mae Ploy if it is available. Also Lobo is available, but only in small packets.

The Thai Green Curry shootout was really a good one, so thanks Pai!
Because there are so many competing brands, it would take a long time to find the most palatable for individual tastebuds. I'm planning to make a Lobster🦞 Green Curry so any inputs would be much appreciated. Happy Eating (มีความสุขในการรับประทานอาหาร)

In Germany Cock brand is everywhere. It is the most widely available by a large margin, you can get it in many supermarkets not just Asian stores. I really had to search hard to locate Mae ploy at all. I found it quite salty by comparison.

So for any future testing an inclusion of Cock would be very welcome.

Thanks for the information. I have always used Cock Brand for red and green curry pastes (it looks almost identical to the Aroy-D container). It’s spicy and full of flavour. I’ve tried Blue Dragon and Thai Kitchen. You are right—the WORST! I’ve only used those one time when I couldn’t find my go-to as it’s sometimes difficult to find, but both of those made the dinners virtually inedible. Lesson learned. They might be fine for people who enjoy a mild taste with no spice.
Have you tried the Cock Brand?
