The freeze it. Same with limes leaves, and lemon grass.

Great video, I've been inspired since I cooked the original beef and basil dish on your channel and am excited about cooking more Thai food. I've found most of the Thai sauces where I am in England but I'm conflicted about buying them because of the ingredients E211 and E635 found across the Golden Mountain sauce, Healthy Boy soy sauce and Oyster sauce; I don't know a lot about it but the literature does say the ingredients are fine in small amounts. I may however try Tamari as a Golden Mountain sauce alternative and Chinese soy sauce as a Thai soy sauce alternative, as you suggested in your soy sauce video, to begin with, and if I don't get the flavour I'm looking for I'll try the Thai sauces (I've already bought the Maekrua oyster sauce so will use that). Anyway, thanks for all your help so far.

I live in Vancouver and not familiar with Toronto, but check out this page: https://hot-thai-kitchen.com/locate-a-thai-grocer/ for some locations there!

Thai chili paste (nam prik pao), you mena? In my experience usually there aren't really any options to choose from as most stores carry only one brand, but if possibly I prefer Mae Pranom brand cuz it's a little less sweet, but Pantai is more widely available and is perfectly fine.

That's interesting, not here in Canada. Maybe they label it differently in different countries. Where do you live?

What kind of fish fillet to make fish cake? I heard that Basa is a bottom feeder and eats rubbish so the meat has some stinky smell.
