I live in Dublin, Ireland. I used to cook a decent enough Tom Yum but... in my last attempts I am getting no flavour/aroma from the lemongrass and galangaI at all, which means that it does not taste like a Tom Yum anymore

I buy both from the Chinese supermarkets I have access to. Not sure what has changed in the delivery from Thailand

In this case, would it be best to buy it frozen? I assume they would freeze them straight after harvesting?
