CURRY PASTE 101: What You Need to Know

Published: May 22, 2018 · Modified: Jan 4, 2021 by Pailin Chongchitnant · This post may contain affiliate links

How do you choose a good curry paste? Should you be making your own? How do you store it? What IS a curry paste anyway? In this video I answer all of these questions and more! Curry paste is so key to Thai cooking, so to really understand curry paste is super important in understanding Thai cuisine as a whole.

Of course the best way to learn about curry pastes is to make one yourself! If you feel up to it, there are a few recipes on this site. For a classic try making green curry paste, or for something milder and even kid-friendly, try yellow curry paste!

Hello Pailin or Adam. If I recall correctly from Discord, Pailin stated viewing videos on HTK website is better for you vs. viewing same video on YouTube.

I ask because video for "Curry Paste 101 What You Need to Know" I cannot access from this HTK website. Clicking various portions of this page does not bring up video. "Curry Paste 101" is still on YouTube.

Thanks and Happy Holidays to you and your family.

Is there a brand of store bought curry you recommend. I would like it in a tube preferably.

Tubes are hard to find in my experience. I can, however, absolutely recommend the Maesri brand (which is the brand shown in the small 4oz tins in the above video) if you want somewhere to start. I've tried the red, green, and Massaman varieties and all have been absolutely excellent.

Mae ploy brand comes in a packet but stored in a plastic tub. If you cut the packet at a diagonal, you can squeeze out the amount of paste you want - like using a tube. Hope that helps 🙂 BTW I can't get Maesri in the UK so can't compare, but Mae ploy tastes miles better than the "Western brands" that are also made in Thailand (shocking really)
